Ingredients
  

For the Casserole

  • 2 tablespoons Butter to sauté squash and onions
  • 4 cups Yellow Squash sliced
  • 1 medium Onion chopped
  • 2 large Eggs
  • 1 cup Cheddar Cheese grated
  • 1 cup Milk
  • 1/4 teaspoon Cayenne Pepper optional
  • 1/2 teaspoon Kosher Salt
  • 1/2 teaspoon Ground Black Pepper

For the Topping

  • 1 sleeve Ritz Crackers crushed

Cooking Process

  • Preheat your oven to 350°F.
  • Melt 2 tablespoons of butter in a medium skillet over medium-low heat. Add in the sliced squash and chopped onions, cooking them until they are tender and fragrant, about 5-7 minutes.
  • Whisk together the eggs in a large bowl until light and fluffy. Then, mix in the cheese and milk until fully combined.
  • Combine the cooked squash and onions with the egg mixture, stirring well.
  • Melt the remaining 2 tablespoons of butter in the same skillet and pour it into the mixture. Add the optional cayenne pepper, salt, and pepper, and mix thoroughly.
  • Prepare a 9x13-inch casserole dish by spraying it with cooking spray. Pour the squash casserole mixture into the dish evenly, then sprinkle the crushed Ritz crackers on top.
  • Bake in the preheated oven for 45 minutes, or until the topping is lightly browned.
  • Cool for about 3 minutes before serving.
