Ingredients
  

For the Filling

  • 12 large Cremini or Button Mushrooms
  • 12 oz Frozen Spinach, thawed or fresh spinach, steamed and squeezed dry
  • 8 oz Cream Cheese, softened
  • 3/4 cup Parmesan Cheese, divided can substitute with Romano
  • 1/2 cup Mozzarella Cheese, shredded can substitute with provolone
  • 1 large Garlic Clove, minced fresh preferred
  • Salt
  • Black Pepper

For the Topping

  • 1/3 cup Panko Bread Crumbs can substitute with regular breadcrumbs
  • 1.5 tsp Olive Oil for moistened topping

Directions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with aluminum foil for easy cleanup.
  • Squeeze out excess moisture from the thawed spinach and transfer to a mixing bowl.
  • Combine softened cream cheese, 1/2 cup of parmesan, shredded mozzarella, minced garlic, salt, and black pepper in the bowl with spinach. Mix until creamy.
  • Spray cleaned mushroom caps with olive oil and arrange on the baking sheet.
  • Stuff each mushroom cap with the creamy cheese mixture using a spoon or small cookie scoop.
  • In a small bowl, mix remaining parmesan, panko bread crumbs, and olive oil. Sprinkle generously over the stuffed mushrooms.
  • Bake for about 20-24 minutes, or until filling is hot and topping is golden brown. For extra crispiness, turn on the broiler for the last minute.

Notes

Optional: Garnish with fresh herbs like parsley or basil before serving.
