Ingredients
  

For the Cheesecake Base

  • 16 oz Cream Cheese full-fat for richest flavor
  • 1 cup Granulated Sugar can use sugar alternative
  • 3 Large Eggs room temperature
  • 1 cup Sour Cream can substitute with Greek yogurt
  • 2 teaspoons Pure Vanilla Extract opt for pure extract
  • 1 tablespoon Lemon Zest use fresh for vibrancy

For the Crust

  • 1 cup Graham Crackers (crushed) gluten-free alternatives available
  • 1/2 cup Butter (melted) unsalted recommended
  • a pinch Kosher Salt to balance sweetness

For the Strawberry Glaze

  • 1 cup Strawberry Preserves can substitute with other fruit preserves
  • 2 tablespoons Water or Lemon Juice fresh lemon juice adds zest

  • Preheat your oven to 325°F (163°C). Prepare a 9-inch springform pan by lining the bottom with parchment paper.
  • Combine crushed graham crackers, melted butter, granulated sugar, and a pinch of salt in a bowl. Press firmly into the bottom of the pan and bake for 5 minutes until slightly golden.
  • Beat the softened cream cheese in a mixing bowl until smooth and creamy. Gradually add granulated sugar, mixing thoroughly.
  • Incorporate the eggs one at a time, mixing well after each addition. Add sour cream, vanilla extract, and lemon zest, mixing until combined.
  • Pour the cheesecake batter over the prepared crust and smooth the top. Bake in a water bath for 55 to 65 minutes.
  • Cool the cheesecake by turning off the oven and leaving it inside for about an hour.
  • Refrigerate for a minimum of 4 hours or overnight. Prepare the strawberry glaze by mixing strawberry preserves with a splash of water or lemon juice until smooth.
  • Assemble the cheesecake by gently releasing it from the springform pan. Pour the glaze over the top and garnish with fresh sliced strawberries.
