  • Prep the ingredients: zest your fresh oranges, halve the cranberries, and let the buttermilk and eggs come to room temperature.
  • Combine sugar and orange zest in a large bowl, then whisk in the all-purpose flour, baking powder, and salt.
  • Whisk together buttermilk, vegetable oil, eggs, orange juice, and vanilla in a separate bowl until fully combined.
  • Mix the wet and dry ingredients together gently, stirring just until combined.
  • Fold in the halved cranberries, dusting them with a touch of flour beforehand.
  • Divide the batter between your prepared loaf pans and bake for 60-75 minutes, or until a toothpick inserted comes out clean.
