  • 1 cup Sugar coconut sugar is a healthier alternative
  • 1/2 cup Oil (Canola or Vegetable) applesauce can be used for a low-fat substitute
  • 2 cups Fresh Zucchini (grated, liquid drained) larger zucchinis yield more
  • 1 teaspoon Vanilla Extract almond extract gives a nuttier twist if preferred
  • 2 cups Flour all-purpose flour or gluten-free flour works
  • 1 teaspoon Cinnamon
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Chopped Walnuts (optional) omit if nuts aren’t your thing

Steps

  • Preheat your oven to 375°F (190°C) and generously grease 2-3 loaf pans.
  • Mix all ingredients in a large bowl until fully blended; take care not to overmix.
  • Divide the batter evenly among your prepared pans.
  • Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool the bread slightly in the pans before transferring to a wire rack.
