  • 1 large Egg room temperature
  • 1 large Egg Yolk room temperature

  • 1 cup Freeze-Dried Strawberries
  • 1 drop Pink Food Coloring optional

Instructions
 

Making the Cookies

  • Beat the softened cream cheese, powdered sugar, and vanilla extract in a mixing bowl until smooth and creamy. Freeze in small dollops for about 30 minutes until firm.
  • In another bowl, whisk together the all-purpose flour, baking soda, and salt. In a separate large bowl, cream the room temperature butter with the light brown sugar and granulated sugar until fluffy. Add the egg, egg yolk, and vanilla extract, mixing well. Slowly incorporate the dry ingredients until just combined.
  • Gently fold in the white chocolate chips and freeze-dried strawberries into the cookie dough. Chill the dough in the refrigerator for roughly 30 minutes.
  • Scoop out a tablespoon of dough, flatten it slightly, place a frozen cheesecake filling dollop in the center, and cover it with more cookie dough, sealing the edges tightly.
  • Preheat your oven to 375°F (190°C). Chill the assembled cookies in the freezer for 1 hour before baking for 10-15 minutes. Let them cool on the baking sheet for 5 minutes before transferring to wire racks.
  • Optional: Dust with powdered sugar before serving.
