  • 2 pounds Red Potatoes Medium starchiness, can substitute with Yukon Gold
  • 3 tablespoons Olive Oil For coating
  • 1 cup Grated Parmesan Cheese Opt for finely grated

For Flavoring

  • 1 tablespoon Fresh Rosemary Optional, can substitute with 1 ½ tsp Italian seasoning
  • 4 cloves Garlic Use fresh
  • to taste Salt For basic seasoning
  • to taste Pepper For basic seasoning

For Garnish

  • ¼ cup Fresh Parsley Chopped

Preparation

  • Preheat oven to 400°F (200°C) and prepare a rimmed baking sheet with non-stick spray and a light dusting of flour.
  • In a bowl, combine red potatoes, olive oil, grated Parmesan, rosemary (if using), salt, and pepper. Toss until evenly coated.
  • Spread the mixture in a single layer on the baking sheet. Bake for about 30 minutes until golden brown.
  • Add minced garlic, toss, and return to the oven for an additional 15 minutes until tender and lightly browned.
  • Sprinkle with chopped parsley before serving.

Notes

Optional: Squeeze a dash of lemon juice for a zesty twist.
