Cake Preparation

  • Preheat the oven to 350°F. Prepare a 9-inch cake pan by applying vegan cooking spray and lining it with parchment paper for easy removal.
  • Mix together the wet ingredients: combine vegetable oil, lemon juice, vanilla extract, flax eggs, and vegan cane sugar until well blended.
  • Stir in the grated carrots to the wet mixture, ensuring they are well incorporated.
  • Combine the dry ingredients: slowly add all-purpose flour, ground cinnamon, baking soda, and baking powder into the wet mixture and mix gently.
  • Fold in the chopped mixed nuts gently.
  • Pour the batter into the prepared cake pan and smooth the top. Bake for approximately 35 minutes.
  • Prepare the vegan cream cheese frosting while the cake bakes by beating together all frosting ingredients until fluffy. Chill in the refrigerator.
  • Frost the cooled cake with the cream cheese frosting and chill for 30 minutes before serving.
