How to Make Jammy Cream Cheese Thumbprint Cookies

  • In a medium bowl, use an electric mixer to blend softened cream cheese and butter until light and fluffy, about 2-3 minutes.
  • Incorporate the granulated sugar into the mixture and continue mixing until well combined, about 1-2 minutes.
  • Gradually add the all-purpose flour at a low speed until just combined. Stop when no streaks of flour are visible.
  • Wrap the cookie dough in plastic wrap and refrigerate for 45 minutes to 2 hours.
  • Preheat your oven to 375°F and line a baking sheet with parchment paper.
  • Roll the dough into 1-inch balls. Press your thumb into the center of each to create a thumbprint, then fill with raspberry preserves.
  • Bake in the preheated oven for 11-12 minutes, or until edges are golden and centers appear slightly underbaked.

Notes
