Ingredients
  

  • - 1 lb ground beef or Italian sausage
  • - 1 tbsp olive oil if needed
  • - 1 small yellow onion diced
  • - 3 cloves garlic minced
  • - 1 tsp dried basil
  • - 1 tsp dried oregano
  • - 1/2 tsp red pepper flakes optional
  • - 2 tbsp tomato paste
  • - 1 28 oz can crushed tomatoes
  • - 4 cups broth chicken or beef
  • - 2 cups water
  • - 8–10 lasagna noodles broken into pieces
  • - Salt and pepper to taste
  • - 1 cup ricotta cheese
  • - 1 cup shredded mozzarella
  • - 1/4 cup grated Parmesan
  • - Fresh basil or parsley for garnish

Instructions
 

  • Heat oil in a large pot. Brown ground meat. Drain excess fat.
  • Add onion and cook 4–5 mins. Stir in garlic and dried herbs.
  • Mix in tomato paste. Add crushed tomatoes, broth, and water.
  • Bring to a boil. Add noodles and simmer 12–15 mins.
  • Season with salt and pepper.
  • Serve topped with ricotta, mozzarella, Parmesan, and fresh herbs.

Notes

- For vegetarian, swap meat for lentils or mushrooms.
- Freeze without cheese toppings for best results.
- Reheat gently with extra broth if needed.
