For the Chips

  • 1 bag Tortilla Chips Choose thick-cut for extra crunch

For the Cheese

  • 2 cups Shredded Cheddar Cheese
  • 2 cups Monterey Jack Cheese

For the Protein

  • 1 lb Ground Beef or Chicken Can be swapped for plant-based protein
  • 1 can Black Beans Rinsed before adding

For the Freshness

  • 2 cups Diced Tomatoes Canned works fine
  • 1 small Red Onion Or substitute with green onions

For the Heat

  • 2 pieces Jalapeño Peppers Pickled or fresh based on preference
  • 1 small jar Pickled Jalapeños Optional

For the Flavor

  • 1 packet Taco Seasoning Homemade is great
  • 1 tsp Garlic Powder
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 2 tbsp Lime Juice Fresh-squeezed preferred

For Toppings

  • 1 cup Sour Cream
  • 1 cup Guacamole
  • 1/2 cup Fresh Cilantro Chopped
  • 1/2 cup Green Onions Chopped
  • 2 tbsp Olive Oil For brushing chips

Step by Step Instructions

  • Preheat your oven to 425°F (220°C).
  • Cook the ground beef or chicken in a skillet over medium heat, mixing in the taco seasoning until fully browned.
  • Prepare your toppings by dicing the tomatoes, red onion, and jalapeños, then shredding the cheeses.
  • Spread half of the tortilla chips on a lined baking sheet and brush lightly with olive oil.
  • Layer half of the shredded cheese over the chips, followed by half of the black beans and the cooked meat.
  • Repeat the process with the remaining chips, cheese, beans, and meat.
  • Bake the nachos for 8-10 minutes, or until the cheese is bubbling and golden brown.
  • Remove from the oven and top with fresh diced tomatoes, red onion, jalapeños, sour cream, guacamole, and cilantro. Serve immediately.
