For the Quesadilla Base

How to Make Simple Chicken Quesadillas

  • In a small bowl, mix together the chili powder, salt, garlic powder, and cumin.
  • Take the cooked chicken and coat it evenly with half of your spice blend. Set it aside.
  • Heat the olive oil in a skillet over medium heat. Add the diced onion and bell peppers along with the remaining spice blend. Sauté for 6-8 minutes.
  • Mix in the hot sauce and fresh cilantro, then fold in the seasoned chicken.
  • On each tortilla, layer some of the shredded cheeses, followed by the chicken and vegetable mixture.
  • In the same skillet, add a little oil again, and cook each quesadilla over medium heat for about 4 minutes per side.
  • Allow the quesadillas to cool slightly before slicing them into wedges.

Notes

Serve with your favorite salsa, guacamole, or sour cream for dipping. Optional: Garnish with extra cilantro or sliced jalapeños.
