Ingredients
  

For the Dough

  • 1 cup Canned Pineapple Juice Avoid fresh juice.
  • 1 cup Whole Milk Warm to 100-110°F.
  • 1/2 cup Unsalted Butter Melted and cooled to 85°F.
  • 1/4 cup Granulated Sugar
  • 1/4 cup Light Brown Sugar Can substitute with more granulated sugar.
  • 2 large Eggs Bring to room temperature.
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Instant Yeast Can substitute with active dry yeast.
  • 4 cups Bread Flour Adjust depending on humidity.
  • 1 cup All-Purpose Flour
  • 1 teaspoon Fine Sea Salt

For the Egg Wash

  • 1 large Egg (for wash) Beaten lightly.
  • 1 tablespoon Water

For Finishing Touch

  • 2 tablespoons Salted Butter (for brushing)

Instructions
 

Making the Dough

  • Combine the pineapple juice, milk, melted butter, granulated and brown sugars, eggs, vanilla, and instant yeast in a stand mixer bowl. Mix until well blended.
  • Stir in the all-purpose flour and 2 cups of bread flour until a shaggy dough forms, then add the fine sea salt.
  • Knead the dough using a dough hook at medium speed for 4-5 minutes, or until it’s smooth and elastic.
  • Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm spot until doubled in size, about 1.5 hours.
  • Deflate the dough gently and divide it into 15 equal pieces. Shape each piece into a ball.
  • Arrange the dough balls in a greased 9x13-inch baking pan, spacing them closely together for fluffy rolls.
  • Brush the tops with the egg wash and cover to let rise once more until doubled, which will take about 1 hour.
  • Preheat the oven to 375°F and bake for 20 minutes or until the rolls are golden brown and sound hollow when tapped.
  • Brush the warm rolls with melted salted butter after baking and serve them fresh from the oven.

Notes

Create a sweet glaze with powdered sugar and milk for an extra touch! Ensure ingredients are at room temperature for best results.
