Ingredients
  

Peanut Sauce

  • 1 cup Peanut Butter Substitute almond butter for a nut-free option.
  • 2 tablespoons Rice Vinegar
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Honey
  • 1/4 teaspoon Black Pepper
  • 1 tablespoon Minced Onion
  • 2 tablespoons Oil Your choice.

Vinaigrette

  • 2 tablespoons Rice Vinegar Use apple cider vinegar for a different flavor.
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Honey
  • 2 tablespoons Garlic Chili Crunch
  • 2 tablespoons Oil Your choice.

Salad Base

  • 6 cups Napa Cabbage Can be replaced with green cabbage.
  • 4 cups Romaine Lettuce Substitute with spinach or kale.
  • 1 cup Baby Spinach

Crunch

  • 1 cup Slivered Almonds Toasted enhances richness.
  • 1 cup Chow Mein Noodles Substitute with rice noodles for gluten-free.

Fresh Elements

  • 1 cup Bell Peppers Substitutable with sweet pepper or shredded carrots.
  • 6 pieces Green Onions Sliced.
  • 1 large Cucumber Thinly sliced, can substitute with radishes.
  • 1 cup Cilantro Leaves only, substitute with parsley if needed.

Protein

  • 1 lb. Rotisserie Chicken Cut into cubes. Any cooked chicken can suffice.

  • Whisk together rice vinegar and peanut butter until smooth. Blend in soy sauce, honey, black pepper, minced onion, and oil. Chill this sauce until ready to serve.
  • In a separate bowl, whisk together rice vinegar, honey, Garlic Chili Crunch, sesame oil, and your choice of oil until smooth. Store this dressing in a jar in the refrigerator.
  • Toast slivered almonds in a skillet over medium heat until golden brown, then spread them across paper towels to cool.
  • Slice all salad vegetables into bite-sized pieces, using a mandolin for cucumbers. Lay out everything colorful and fresh!
  • In a large bowl, combine Napa cabbage, Romaine lettuce, spinach, bell peppers, green onions, cucumber, and most of the cilantro. Drizzle with vinaigrette and toss gently.
  • At serving time, fold in cubed rotisserie chicken, chow mein noodles, toasted almonds, and the remaining cilantro. Top with chilled peanut sauce and toss to coat.

Notes

For meal prep, keep the dressing separate until eating for maximum freshness.
