Ingredients
  

  • - 1½ lbs chicken thighs or breasts
  • - 1 tbsp olive oil
  • - 1 small onion diced
  • - 3 cloves garlic minced
  • - ½ cup sun-dried tomatoes chopped
  • - 4 cups chicken broth
  • - 1 cup heavy cream
  • - ½ tsp red pepper flakes
  • - 1 tsp Italian seasoning
  • - Salt & pepper to taste
  • - ¼ cup Parmesan cheese
  • - 1 tbsp fresh basil chopped
  • - Optional: spinach cooked pasta, or rice

Instructions
 

  • Sear chicken in olive oil. Set aside.
  • Sauté onion, garlic, and sun-dried tomatoes.
  • Add broth, spices, and return chicken. Simmer 30 minutes.
  • Remove, shred chicken. Return to pot. Stir in cream and Parmesan.
  • Simmer 5–10 mins. Add basil. Adjust seasoning. Serve hot.

Notes

- Add dairy at the end to prevent curdling
- Freezes well for up to 3 months
- Serve with crusty bread or over rice
