Ingredients
  

  • - 2 tbsp olive oil
  • - 1 small yellow onion diced
  • - 3 garlic cloves minced
  • - ½ tsp red pepper flakes optional
  • - 2 tbsp flour
  • - 4 cups chicken broth
  • - 1½ cups half and half
  • - 1½ cups cooked shredded chicken
  • - ½ cup sun-dried tomatoes chopped
  • - ½ tsp thyme
  • - ½ tsp basil
  • - Salt & pepper to taste
  • - ½ cup grated Parmesan cheese
  • - 2 cups baby spinach
  • - Juice of ½ lemon

Instructions
 

  • Sauté onion in olive oil until soft. Add garlic and red pepper flakes.
  • Stir in flour and cook for 1 minute.
  • Slowly add chicken broth. Simmer 5 minutes.
  • Add half and half, chicken, tomatoes, thyme, basil. Simmer 10 minutes.
  • Stir in Parmesan, spinach, and lemon juice. Season to taste and serve.

Notes

- Substitute cream for richer soup
- Add pasta or rice for more bulk
- Skip red pepper flakes for mild version
- Make dairy-free with coconut milk and omit cheese
