How to Make Marry Me Wild Turkey

  • Prep the Turkey: Start by removing the turkey breast from the refrigerator at least 30 minutes before cooking.
  • Cut and Pound: Trim the thin, lower portion of the turkey breast and set aside. Halve the thicker upper portion crosswise, resulting in four equal pieces. Pound each piece to an even thickness, then season generously with coarse salt and cracked black pepper.
  • Brown the Turkey: Heat a large skillet or braising pan over high heat, then add schmaltz to lightly coat the bottom. Once hot, place the turkey pieces in the pan and brown them on both sides until golden, about 4-5 minutes. Remove and set aside.
  • Sauté Aromatics: Reduce the heat to low and add more schmaltz or oil if necessary. Sauté the finely chopped shallot, minced herbs, and crushed red pepper until the shallot is soft, about 1-2 minutes. Add the minced garlic and cook for another minute until fragrant.
