For the Stir Fry

  • 1 pound Chicken Breast Substitute with chicken thighs for a juicier result.
  • 4 cups Fresh Spinach Frozen spinach works if thawed and drained first.
  • 1 cup Cherry Tomatoes Substitute with whole or grape tomatoes if needed.
  • 1 large Red Bell Pepper Try yellow or orange peppers for a colorful twist.
  • 1 medium Yellow Squash Zucchini makes a great substitute.
  • 2 cloves Garlic Garlic powder can be used if short on fresh.
  • 2 tablespoons Olive Oil Avocado oil or vegetable oil can be substitutes.
  • 1 teaspoon Dried Oregano Basil or thyme are suitable alternatives.
  • 1 teaspoon Red Pepper Flakes Omit if you prefer a milder dish.
  • 1 tablespoon Lemon Zest Fresh lime juice can also be used.

How to Make Mediterranean Chicken Stir Fry

  • Pat the chicken breast dry and season with salt, pepper, and half of the dried oregano. Let sit for 5 minutes.
  • Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 5-6 minutes until golden brown. Flip and cook for another 3-4 minutes. Transfer to a plate and keep warm.
  • In the same skillet, add remaining olive oil and minced garlic. Sauté for about 30 seconds until fragrant. Add diced red bell pepper and sliced yellow squash; cook for 4-5 minutes until soft.
  • Add halved cherry tomatoes, return browned chicken to the skillet. Fold in fresh spinach, remaining oregano, and red pepper flakes. Toss and sauté for 2-3 minutes until spinach wilts.
  • Remove from heat and zest the lemon over the stir fry. Adjust seasoning if needed, and serve hot.

Notes

Optional: Garnish with fresh parsley for an extra burst of flavor.
