Ingredients
  

For the Chicken

  • 1 pound Chicken Breast (mini fillets or thin strips) skinless thighs can be substituted
  • 2 tablespoons Olive Oil extra virgin for best flavor
  • 3 cloves Garlic (grated or minced)
  • 2 teaspoons Peri-Peri Seasoning can substitute with Italian, French, or Greek seasonings
  • 1 teaspoon Salt adjust according to dietary needs

For the Vegetables

  • 1 medium Eggplant (thinly sliced) must be sliced thinly
  • 1 medium Zucchini or Courgette (thinly sliced) either yellow or green varieties
  • 1 medium Sweet Pepper (thinly sliced) can substitute with regular bell peppers
  • 1 medium Red Onion (thinly sliced)
  • 1 cup Cherry Tomatoes leave them whole
  • 2 cups Spinach (fresh) avoid frozen due to excess moisture

Cooking Instructions

  • In a medium bowl, mix olive oil, minced garlic, peri-peri seasoning, and salt. Add the chicken strips, ensuring they are well-coated, and let marinate for at least 30 minutes for maximum flavor.
  • Wash, peel, and slice all vegetables into uniform pieces, including eggplant, zucchini, and sweet peppers.
  • Heat olive oil in a large frying pan over medium-high heat. Add the marinated chicken strips and sauté until golden brown and fully cooked, about 5-6 minutes. Remove from the pan and set aside.
  • In the same pan, add another tablespoon of olive oil. Stir-fry the vegetables in batches, starting with the eggplant and zucchini, followed by sweet peppers and red onion.
  • Add the remaining olive oil, then toss in the cherry tomatoes, cooking until they start to blister. Gently fold in the fresh spinach until just wilted.
  • Return the cooked chicken to the pan, mixing everything gently to combine. Serve hot on its own or over your favorite base.

Notes

Optional: Garnish with a sprinkle of feta cheese for extra flavor.
