Ingredients
  

For the Dip Base

  • 8 oz Julienne sliced bacon adds a smoky flavor and crispy texture
  • 1 lb Ground beef provides a hearty component
  • 1 cup Yellow onions for sweetness and depth
  • 2 cloves Garlic finely minced
  • 8 oz Full-fat cream cheese ensures a rich, creamy texture
  • 8 oz Pasteurized cheese product like Velveeta or American cheese

For the Fresh Elements

  • 1 cup Diced Roma tomatoes adds a fresh burst of flavor
  • 1 piece Jalapeño small diced for a spicy kick
  • 1 cup Amber ale beer introduces unique flavor depth
  • 2 tbsp Lime juice adds a zesty tang

For the Garnish

  • 2 tbsp Green onions thinly sliced
  • 2 tbsp Fresh cilantro finely minced

Cooking Instructions

  • Cook the bacon in a large skillet over low to medium heat until crisp, about 8 to 10 minutes. Set aside and strain the bacon fat.
  • In the same skillet, add 2 tablespoons of bacon fat, return to medium-high heat. Add ground beef, cook untouched for 3 minutes, then break up and cook until fully browned. Set aside.
  • Sauté onions in 2 tablespoons of bacon fat on medium-high heat for 3 to 4 minutes until slightly browned.
  • Reduce heat to low-medium and caramelize onions for 30-35 minutes, then stir in garlic and cook for an additional 30 to 45 seconds.
  • In a slow cooker, add cream cheese and Velveeta, cooking on high for 25-30 minutes until melted, stirring occasionally.
  • Combine caramelized onions, beef, and bacon into the slow cooker with melted cheeses, and stir until well combined.
  • Add diced tomatoes and jalapeños to the mixture, covering the slow cooker and heating for 10-15 minutes until fully integrated.
  • Stir in amber ale beer, lime juice, green onions, and cilantro until blended.
  • Garnish with green onions and cilantro, and serve warm with tortilla chips.

Notes

For extra spice, add jalapeño slices on top. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
