How to Make Chocolate Chip Muffins

  • Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  • In a large bowl, whisk together the pumpkin puree, granulated sugar, light brown sugar, vegetable oil, eggs, vanilla extract, and sour cream until smooth.
  • In a separate bowl, mix together the baking powder, baking soda, pumpkin pie spice, and kosher salt. Gradually add this to the wet ingredients, stirring gently.
  • Fold in the all-purpose flour until incorporated, then gently add the chocolate chips.
  • Scoop the batter into the muffin liners, filling them about 2/3 full. Optionally, sprinkle extra chocolate chips on top.
  • Bake for 25-30 minutes, checking doneness with a toothpick.
  • Allow the muffins to cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
