For Cooking

  • 1 tbsp Oil olive oil recommended
  • 1 medium Onion finely diced
  • 1 medium Red Bell Pepper finely diced

  • 4 large Large Eggs for fluffy filling

  • 1 cup Cheddar Cheese sharp cheddar suggested

  • 4 10-inch Flour Tortillas the perfect wrap

  • Heat oil in a large skillet over medium-high heat.
  • Add turkey and seasonings: Stir in ground turkey, maple syrup, ground sage, salt, garlic powder, thyme, black pepper, and cayenne. Cook for about 6-8 minutes until the turkey is browned and fully cooked.
  • Transfer turkey to a bowl and set aside for later use.
  • Sauté vegetables: In the same skillet, add diced onion and red bell pepper. Sauté for 3-4 minutes until softened and fragrant.
  • Whisk eggs: In a separate bowl, whisk together the large eggs with a pinch of salt and a splash of hot sauce.
  • Cook eggs: Pour the egg mixture into the skillet with the sautéed vegetables, stirring continuously for 3-5 minutes until just set but still fluffy.
  • Combine filling: Fold the cooked turkey back into the egg mixture, and sprinkle in the cheddar cheese, stirring until combined. Let the filling cool for about 10 minutes.
  • Warm tortillas: Heat tortillas gently in a dry skillet or microwave until soft and pliable. Spoon the turkey-egg mixture down the center, fold the sides in, and roll securely to form a burrito.

Notes

Store wrapped burritos in the fridge for up to 4 days or freeze for up to 3 months. Reheat in microwave or oven.
