Making the Rolls

  • Combine Ingredients: In a stand mixer, mix together the canned pineapple juice, warm whole milk, melted unsalted butter, granulated sugar, light brown sugar, eggs, vanilla extract, and instant yeast until well combined.
  • Add Flour: Gradually stir in all-purpose flour and 2 cups of bread flour to the mixture. Add the fine sea salt and combine until everything is incorporated.
  • Knead Dough: Attach the dough hook to your mixer and knead the mixture for about 4-5 minutes, adding the remaining bread flour as needed until you have a smooth and soft dough.
  • First Rise: Shape your dough into a ball and place it in a greased bowl. Cover with a cloth and let it rise until it has doubled in size, which should take about 1.5 hours.
  • Shape Rolls: Once risen, deflate the dough and divide it into 15 equally sized pieces. Roll each piece into a ball and arrange them in a greased 9x13-inch baking pan.
  • Second Rise: Prepare the egg wash by whisking together the remaining egg and water. Brush this mixture over the rolls. Cover the pan and let them rise again for about 1 hour until they’ve doubled in size.
  • Bake: Preheat your oven to 375°F. Bake the rolls for 20 minutes, or until they are golden brown, brushing them with melted salted butter immediately after baking.
