  • 1 teaspoon Garlic Salt Substitution: Use fresh minced garlic with regular salt.
  • 1 teaspoon Smoked Paprika Substitution: Regular paprika can be used.

For the Toppings

  • 1 cup Sharp Cheddar Cheese (shredded) Substitution: Other cheeses like Monterey Jack or pepper jack can add unique flavors.
  • 6 slices Bacon (cooked and crumbled) Vegetarian option: Use crispy fried onions or tempeh bacon.
  • 2 tablespoons Green Onions (sliced) Substitution: Chives can be used for a similar taste.
  • 1/2 cup Sour Cream Substitution: Greek yogurt can be a healthier alternative.
  • 2 tablespoons Fresh Parsley (chopped, optional) Cilantro can be a different herb option depending on personal preference.

Preparation Steps

  • Preheat your oven to 425°F (220°C). Lightly grease a baking sheet with oil and heat it for about 5 minutes until warm.
  • In a large bowl, toss the sliced small yellow potatoes with olive oil, salt, black pepper, garlic salt, and smoked paprika until they're evenly coated.
  • Spread the coated potato slices in a single layer on the heated baking sheet. Make sure they aren’t overcrowded for the best crispiness.
  • Bake in the preheated oven for 25-30 minutes, flipping them halfway through, until they're crispy and golden brown.
  • Once baked, remove the potatoes from the oven and sprinkle with shredded sharp cheddar cheese and crumbled bacon. Return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
  • Remove from the oven, and top with sliced green onions and a drizzle of sour cream. If you like, sprinkle with chopped parsley before serving. Enjoy immediately!

Notes

For an extra layer of flavor, try adding diced avocado on top.
