How to Make Kielbasa Sausage

  • Combine the ground meat, onion, garlic, bay leaves, mustard seeds, salt, and pepper in a large bowl. Use your hands to mix everything together thoroughly, ensuring an even distribution of flavors.
  • Prepare the sausage casings by running water through them to wash away any excess salt. This step helps to make the casings more pliable and ready for stuffing.
  • Assemble your equipment by removing the cutting knife from your meat grinder and attaching the stuffer. Secure one end of the casing onto the stuffer, creating a tight seal to avoid any leaks.
  • Fill the grinder with the meat mixture, then hold the sausage casing taut. Use the plunger to fill the casing with the meat mixture, taking care not to overstuff it for a smooth finish.
  • Tie off the casing by pulling it off the stuffer and tying the loose end in a knot. If making links, twist the casing in intervals to create evenly sized sausages.
  • Preheat your oven to 350°F (175°C). Place your stuffed sausages on a baking tray and poke small holes in them with a toothpick to let steam escape during baking.
  • Bake the sausages for 30 minutes, checking for a golden brown color. This step ensures that the flavors meld together beautifully while achieving a delightful texture.
