Ingredients
  

For the Base

  • 2 tablespoons Olive Oil Can be substituted with canola oil if preferred.
  • 1 large Onion Diced into 1/2-inch pieces.
  • 4 cloves Garlic Minced.
  • 1 bunch Celery Leaves Can substitute with chopped celery stalks.
  • 2 leaves Bay Leaves

For the Protein and Fiber

  • 1 pound Ground Turkey Opt for 93/7 for leaner soup or 85/15 for juicier flavor.
  • 2.5 teaspoons Salt Adjusted to taste.
  • 1.5 teaspoons Garlic Powder Recommended for roasted garlic flavor.
  • 1.5 teaspoons Pepper To taste.
  • 1.5 teaspoons Rosemary
  • 1.5 teaspoons Oregano
  • 1.5 teaspoons Cumin
  • 1.5 teaspoons Smoked Paprika

For the Veggies

  • 1 cup Sweet Potato Cut into 1-inch chunks.
  • 1 medium Plantain Slice into 1/2-inch rounds or substitute with banana.
  • 1/2 cup Tomato Sauce Preferably Hunt's.
  • 4 cups Bone Broth Opt for Kettle & Fire.
  • 1 15-ounce can Garbanzo Beans Drained and rinsed.

Steps

  • Start by dicing the onion, mincing the garlic, peeling, and cutting the sweet potato into 1-inch chunks, and slicing the plantain into 1/2-inch rounds.
  • In your pressure cooker, heat olive oil on sauté mode. Add the diced onion, minced garlic, celery leaves, and bay leaves; sauté for 3-4 minutes until the onion is translucent.
  • Add the ground turkey to the pot, breaking it into small pieces. Cook for 5-7 minutes until it’s no longer pink.
  • Stir in the salt, garlic powder, pepper, rosemary, oregano, cumin, and smoked paprika. Toast the seasonings for about 30 seconds.
  • Add the sweet potato chunks and plantain slices, stirring well.
  • Pour in the tomato sauce and bone broth, then stir to combine. Add the garbanzo beans.
  • Seal the lid of the pressure cooker and set to medium pressure for 15 minutes.
  • Carefully release the pressure, stir the soup, and adjust seasoning before ladling into bowls.

Notes

Top your soup with a sprinkle of fresh herbs for added brightness.
