  • 4 medium Potatoes Russet, Yukon Gold, or Red
  • 3 medium Carrots
  • 1 medium Onion or shallots/leeks
  • 4 cups Vegetable Broth preferably Better Than Bouillon
  • 2 tablespoons Dijon Mustard optional
  • 1/4 cup Nutritional Yeast
  • to taste Pepper
  • to taste Salt

Directions

  • Begin by peeling and cutting the potatoes into 1-inch chunks. Slice the carrots into 1/2-inch rounds and finely dice the onion.
  • Heat 2 tablespoons of vegetable broth in a large pot over medium heat. Add the diced onions and sauté for 4-5 minutes until they become translucent and fragrant.
  • Add the sliced carrots to the pot. Stir and cook for another 3-4 minutes until the carrots start to caramelize.
  • Stir in the potato chunks along with the remaining broth. Bring to a boil, then reduce the heat and let it simmer for 8-10 minutes, until the potatoes are fork-tender.
  • Add Dijon mustard, pepper, and salt to the pot, and continue simmering for another 5-7 minutes.
  • Allow the soup to cool slightly, then blend it until smooth using an immersion blender, incorporating the nutritional yeast.
  • Enjoy the soup warm, garnished with fresh herbs or additional nutritional yeast.
