Ingredients
  

  • **For the Stew**
  • - 1 tbsp olive oil
  • - 1 lb ground beef 80/20 preferred
  • - 2 large carrots chopped
  • - 2 celery stalks chopped
  • - 1 large onion diced
  • - 1 tbsp garlic minced
  • - 2 sprigs fresh thyme or 1 tsp dried
  • - 1 bay leaf
  • - ½ lb potatoes cubed
  • - 2 ½ cups beef stock
  • - 1 tbsp Worcestershire sauce
  • - Salt and pepper to taste
  • - 1 packet brown gravy mix
  • **For Thickening**
  • - 2 tbsp all-purpose flour
  • - ½ cup water

Instructions
 

  • Brown ground beef in a large pot, drain, and set aside.
  • In same pot, heat oil and sauté carrots, celery, and onion for 8–10 minutes.
  • Add garlic, thyme, bay leaf, salt, and pepper. Cook until fragrant.
  • Stir in potatoes, broth, Worcestershire sauce, and beef. Bring to a boil.
  • Reduce heat, cover, and simmer for 25–30 minutes.
  • Stir in gravy mix. Whisk flour and water into slurry, add, and simmer until thickened.
  • Remove bay leaf and thyme. Taste and serve.

Notes

- Add peas or corn at the end for extra veggies
- For a gluten-free version, use cornstarch instead of flour
