- 1 cup creamy peanut butter
- 1/2 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 40 mini Reese’s Peanut Butter Cups unwrapped
Preheat oven to 350°F (175°C). Line mini muffin tin with paper liners or grease lightly.
In a bowl, cream peanut butter, butter, and both sugars until fluffy.
Beat in egg and vanilla.
In a separate bowl, whisk flour, baking soda, and salt. Gradually mix into the wet ingredients.
Roll dough into 1-inch balls and place into muffin cups.
Bake for 8–10 minutes until just set.
Immediately press a mini Reese’s into each cookie.
Cool in the pan for 10 minutes, then transfer to a wire rack.
Chill dough if it's too sticky to handle
Switch out Reese’s for Rolos or other mini candies
Store in a sealed container to keep fresh
