  • 4 cups Persian cucumbers or Kirby cucumbers
  • 1 cup Fresh dill
  • 2 cloves Garlic thinly sliced
  • 1 leaf Bay leaf

For the Brine

  • 1 cup Water
  • 1 cup Rice vinegar
  • 1 tablespoon Fine sea salt
  • 1 teaspoon Black peppercorns
  • 1 teaspoon Mustard seeds optional
  • 1 teaspoon Crushed red pepper flakes adjust to taste

  • Layer the cucumbers, dill, garlic, and bay leaf in a large jar, carefully layering the dill and garlic between the cucumbers to encourage flavor infusion.
  • Whisk together in a measuring jar the water, rice vinegar, sea salt, black peppercorns, and crushed red pepper flakes until well combined.
  • Pour the brine over the cucumber mixture, ensuring everything is submerged. Cover the jar securely with a lid and give it a gentle shake.
  • Refrigerate for at least 1 day before savoring, although they can be enjoyed after just a few hours of marinating.

Notes

Store in a sealed jar for up to 1 week. Avoid letting them sit outside the fridge for too long.
