How to Make Easy Saucy Ramen Noodles

  • In a bowl, whisk together the soy sauce, sweetener, and chili flakes until smoothly combined. Taste and adjust the sweetness to fit your preference.
  • Bring a pot of water to a boil. Cook the ramen noodles for 2-3 minutes less than the package instructions indicate. Drain and rinse with cold water.
  • Heat the oil in a large pan over medium-high heat. Add your choice of vegetables and tofu (if using), sautéing until tender and colorful, about 3-4 minutes.
  • Pour the prepared sauce into the pan with the sautéed veggies. Let it simmer for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
  • Stir in the drained noodles, tossing everything together to coat evenly with the sauce. Cook for another 3 minutes, ensuring everything is heated through.
  • Taste your creation and adjust seasonings as needed. Top with sesame seeds and chopped scallions. Serve hot and enjoy!
