Ingredients
  

For the Chicken

  • 1 pound Skinless Chicken Breast Can substitute with tofu for a vegetarian option.
  • 2 tablespoons Cornstarch Can substitute with arrowroot or flour.
  • 2 tablespoons Lemon Juice Can replace with rice vinegar if needed.
  • 3 tablespoons Low Sodium Soy Sauce Tamari serves as a gluten-free alternative.
  • 1 teaspoon Ground Ginger Fresh ginger is an excellent alternative.
  • 1 cup Chicken Broth Vegetable broth works for a vegetarian version.
  • 2 tablespoons Vegetable Oil Olive oil can be used but may alter the taste.

For the Vegetables

  • 1 medium Shallot Use onion or green onion as substitutes.
  • 1 medium Bell Pepper Any color works beautifully.
  • 4 cups Shredded Cabbage Bok choy or napa cabbage can be substituted.
  • 1 medium Carrot Other root vegetables like zucchini can be utilized.
  • 1 cup Frozen Peas Fresh peas are great in season.
  • 2 stalks Scallion For garnish.

For the Topping

  • 1 tablespoon Sesame Seeds Optional but highly recommended!

Preparation

  • Marinate Chicken: In a bowl, combine cornstarch, lemon juice, soy sauce, ginger, and chicken broth. Add the chicken and let it marinate for 15 minutes.
  • Sauté Chicken: Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Drain the chicken, saving the marinade. Add the chicken to the skillet and stir-fry for about 4 minutes, until browned. Remove from pan.
  • Cook Vegetables: In the same skillet, add another tablespoon of oil. Sauté the shallot for 1-2 minutes, then toss in bell pepper, cabbage, and carrot. Cook for around 4 minutes until cabbage wilts.
  • Combine Ingredients: Return chicken to the skillet, adding frozen peas and reserved marinade. Stir-fry until chicken is cooked through, about 2-3 minutes.
  • Serve: Garnish with sliced scallions and a sprinkle of sesame seeds. Serve immediately.

Notes

Drizzle a little extra lemon juice for added freshness. Consider making a double batch for meal prep.
