For the Dressing

  • 1/4 cup Rice Vinegar adds acidity

For the Slaw

  • 2.25 lbs Cabbage shredded
  • 4 Scallions separate whites and greens
  • 1 cup Cilantro roughly chopped
  • 2 tbsp Toasted Sesame Seeds lightly toasted
  • 1/3 cup Roasted Peanuts providing crunch

Instructions
 

Making the Dressing

  • In a small bowl, whisk together the rice vinegar, sugar, soy sauce, and salt until the sugar is fully dissolved.
  • Finely mince the garlic and ginger. Add them along with olive oil and sesame oil. Whisk well to emulsify.

Preparing the Slaw

  • Slice the scallions, keeping the whites separate from the greens.
  • Chop the cilantro and shred the cabbage into thin strips.
  • In a large bowl, toss together the shredded cabbage, scallion whites, and cilantro. Pour dressing over and mix well.
  • Taste and adjust seasoning if needed.
  • Optionally, lightly toast sesame seeds and peanuts for enhanced flavor.

Notes
