  • 1 medium Carrot Shredded for faster cooking.

For the Sauce

  • ¼ cup Soy Sauce Opt for low-sodium for a healthier choice.
  • 2 tbsp Dark Soy Sauce Optional, for color and richness.
  • 2 tbsp Rice Wine Contributes aromatic depth.

For Cooking

  • 3 tbsp Cooking Oil Olive oil is preferred for health reasons.
  • 3 cloves Garlic Brings a fragrant kick.

Preparation

  • In a bowl, mix together chicken thighs, soy sauces, minced garlic, cornstarch, and 2 tablespoons of rice wine. Let it marinate for 15 minutes, adding a little water if it seems too dry.
  • Heat 1 tablespoon of oil in a non-stick pan over medium heat. Add the marinated chicken, taking care to separate the strips as they cook for about 5 minutes, until they’re completely cooked through. Set aside.
  • In the same pan, pour in 2 tablespoons of oil. Add sliced onions and shredded carrots; stir-fry them for about 5 minutes until they become tender but still vibrant.
  • Return the chicken to the pan along with spring onions, stirring over high heat for 20-30 seconds. Splash in any remaining rice wine, turn off the heat, and serve immediately!

Notes

Optional: Top with sesame seeds for an added crunch.
