Ingredients
  

For the Steak

  • 1 lb Sirloin Steak about 1-inch thick
  • 2 tbsp Olive Oil for marinating
  • 2 cloves Garlic minced
  • 2 tbsp Lemon Juice fresh
  • 1 tsp Dried Oregano
  • 1 tsp Dried Thyme
  • to taste Salt
  • to taste Black Pepper

For the Grain Base

  • 2 cups Cooked Grains brown rice, quinoa, or cauliflower rice

For the Toppings

  • 1 cup Roasted Chickpeas optional
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1/2 medium Red Onion diced
  • 1/2 cup Kalamata Olives pitted
  • 1/2 cup Feta Cheese optional
  • 1/4 cup Fresh Herbs parsley or dill

For the Tzatziki

  • 1 cup Greek Yogurt or coconut yogurt for dairy-free
  • 1 clove Minced Garlic
  • 1/2 cup Grated Cucumber squeezed dry
  • 1 tbsp Honey optional

Preparation

  • Marinate the Steak: Combine olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and black pepper in a bowl. Coat the sirloin steak and let it marinate for 30 minutes to 4 hours.
  • Prepare Tzatziki: Mix Greek yogurt, minced garlic, grated cucumber, and honey in a bowl. Chill in the fridge to let flavors meld.
  • Make Vinaigrette: Whisk together olive oil, lemon juice, honey, salt, and pepper in a small bowl until combined.

Cooking

  • Cook the Steak: Heat a skillet over medium-high heat and sear the marinated steak for 4–5 minutes on each side until desired doneness. Let it rest for a few minutes before slicing thinly.
  • Assemble the Bowl: Layer cooked grains in a serving bowl, top with slices of steak and toppings: roasted chickpeas, cherry tomatoes, cucumber, onion, olives, and feta. Drizzle with tzatziki and vinaigrette.
