  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup for vegan option
  • 1 teaspoon vanilla extract optional

  • 2 cups old-fashioned oats
  • 1/2 cup mini chocolate chips for even distribution

Method

  • Line a 9x13 inch baking dish with parchment paper.
  • In a large bowl, mix together the peanut butter, honey, vanilla, and salt until smooth and creamy.
  • Fold in the oats, chocolate chips, and pepitas until well combined.
  • Transfer the mixture to the prepared dish and press it into an even layer.
  • Refrigerate for at least 1 hour to set.
  • Once set, lift out and slice into 12-16 bars.
  • Store in an airtight container in the fridge for up to 1 week.

Notes

Optional: Drizzle with melted chocolate for an extra treat. Adjust consistency as needed when mixing ingredients.
