  • 1/4 cup Extra-Virgin Olive Oil Use high-quality oil for best flavor.
  • 2 tablespoons Pomegranate Molasses Can use honey in absence.
  • 1 tablespoon Honey Agave syrup can be an alternative.
  • 1 tablespoon Ground Sumac Za'atar can be used as a substitute.
  • 1 clove Garlic Adjust or omit based on preference.

How to Make Fattoush Salad

  • Preheat your oven to 425°F. Tear the pita bread into 1-inch pieces, drizzle them with olive oil, sprinkle with sea salt, and spread them on a lined baking sheet. Bake for 13-20 minutes until golden and crisp, flipping halfway for even toasting.
  • In a medium bowl, whisk together the extra-virgin olive oil, lemon juice, pomegranate molasses, honey, ground sumac, grated garlic, and sea salt until well combined.
  • In a large bowl, mix the romaine lettuce, Persian cucumbers, cherry tomatoes, red radishes, red onion, half of the crispy pita, and half of the fresh herbs. Pour on half of the dressing and toss gently to coat.
  • Top the salad with the remaining pita, fresh mint, and parsley. Optionally, sprinkle a bit more sumac on top if desired. Serve immediately.
