Preparation

  • In a mixing bowl, combine shredded mozzarella, crumbled feta, fresh spinach, diced tomato, sliced red onion, and black pepper. Stir together until well blended.
  • Place a tortilla on a clean surface. Add one-fourth of the filling mixture to one half of the tortilla. Fold the other half over gently, creating a half-moon shape.
  • Warm olive oil in a non-stick skillet over medium heat. Once hot, add the folded quesadilla. Cook for 3-4 minutes, pressing gently to encourage the cheeses to melt and the tortilla to crisp.
  • Carefully flip the quesadilla and cook for another 3-4 minutes until both sides are golden brown and crispy.
  • Remove from the heat and let it cool slightly. Slice into wedges and serve warm with your favorite dipping sauce or a refreshing salad.

Notes

Optional: Garnish with fresh herbs like basil or parsley for added freshness.
