Ingredients
  

For the Base

  • 2 cups fresh corn kernels
  • 1 tablespoon olive oil
  • 12 oz sausage

For the Vegetables

  • 1 large red bell pepper
  • 1 large zucchini

For the Seasoning

  • 0.5 teaspoon chili powder
  • 1 handful fresh cilantro chopped

Steps

  • Begin by heating 1 tablespoon of olive oil in a cast-iron skillet over medium heat.
  • Slice the cooked sausage into coins and cook them in the hot skillet for about 5 minutes on one side, then flip and cook for an additional 3 minutes.
  • Remove the sausage from the skillet and set aside on a large plate.
  • Using the same skillet, toss in the diced red bell pepper and cook for about 4 minutes until they soften.
  • Add the cooked bell pepper to the plate with the sausage.
  • Next, add the sliced zucchini to the skillet and sauté for approximately 3 minutes.
  • Carefully slice the corn kernels off the cob to achieve about 2 cups.
  • Add the cooked sausage, bell pepper, zucchini, and corn back into the skillet, mix it all together, and add 0.5 teaspoon of chili powder.
  • Reheat everything on low for a few minutes to meld the flavors, and garnish with chopped fresh cilantro before serving.
