Ingredients
  

  • - 12 oz Italian sausage spicy or mild
  • - 1 tbsp olive oil
  • - 1 tbsp Italian seasoning
  • - 1 tsp smoked or regular paprika
  • - 1 large sweet potato peeled and cubed
  • - 5 cloves garlic minced
  • - ¼ tsp red pepper flakes
  • - 1 tbsp tomato paste
  • - 6 cups water or chicken broth
  • - 8 oz three-cheese tortellini refrigerated
  • - 4 oz fresh spinach
  • - ½ cup heavy cream
  • - 4 tbsp fresh thyme
  • - Salt to taste

Instructions
 

  • Heat olive oil in a pot. Add sausage, cook until browned. Drain grease.
  • Add sweet potatoes, garlic, red pepper flakes, and tomato paste.
  • Pour in water or broth. Simmer covered for 15 minutes.
  • Add tortellini. Cook covered for 8–10 minutes.
  • Stir in spinach and remove from heat. Mix in cream.
  • Season with salt and top with fresh thyme.

Notes

- Use broth for more flavor
- Swap sweet potato with carrots or squash
- Stir cream in off the heat to prevent curdling
