  • Place a 12-inch cast iron skillet over medium-high heat. Once hot, add the lamb chops fat-side down, pressing gently with tongs for about 5 minutes until crispy.
  • Flip the chops to lay them flat and sear for an additional 3 minutes until browned. Flip again and repeat this process on the other side.
  • Lower the heat to medium-low, pour off any excess fat, then add the unsalted butter, minced garlic, and fresh thyme. Stir until the butter foams, basting the lamb.
  • Plate the chops, drizzle them with the garlic butter sauce, ensuring each chop is coated.
