For the Chicken Marinade

For the Fresh Salsa

  • 1.25 cups Cucumbers Adds crunch.
  • 1 cup Tomatoes Juicy and vibrant.
  • 1 cup Bell pepper Extra nutrients.

For the Toppings

  • In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, paprika, salt, pepper, and red pepper flakes. Add the chicken breast, making sure it's well-coated. Let it marinate for 30 minutes to infuse the flavors!
  • While the chicken marinates, chop your cucumbers, tomatoes, bell pepper, red onion, and parsley. Mix them in a bowl with a splash of lemon juice and set aside.
  • Preheat your grill or grill pan to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until cooked through and golden brown.
  • While the chicken cooks, wrap the pitas in foil and warm them on the grill for a few minutes or in a dry skillet until soft.
  • Slice the grilled chicken into strips. Take a warm pita, add some chicken, top it with your fresh salsa, a sprinkle of feta, and a dollop of tzatziki. Fold and enjoy!

Notes

Optional: Squeeze additional lemon juice over the tacos for extra flavor.
