For the Salmon Bites

  • 10 oz Salmon Cut into 1-inch cubes.
  • 2 tsp Sesame Oil For cooking.
  • 1 tsp Sesame Oil For topping.

For the Topping

  • 3 tbsp Green Onion Chives can act as a substitute.
  • 3 tbsp Red Bell Pepper Any vibrant bell pepper color will work.
  • 1 tbsp Ponzu Can be replaced with rice vinegar mixed with soy sauce.
  • to taste Sesame Seeds Flaxseeds or crushed nuts can replace those avoiding seeds.

  • In a small saucepan over medium heat, combine soy sauce, light brown sugar, honey, and gochujang. Stir until smooth as the aroma begins to fill your kitchen.
  • Stir in the bourbon and bring the mixture to a gentle simmer. Allow it to reduce for 5-7 minutes until it thickens and coats the back of a spoon beautifully.
  • In a separate bowl, whisk together toasted sesame oil, ponzu, soy sauce, green onion, and red bell pepper. Set this vibrant mixture aside to let the flavors meld.
  • Pat salmon cubes dry and heat a griddle or skillet with sesame oil until shimmering. Carefully add the salmon without moving them for 2-3 minutes to create a golden crust.
  • Flip the salmon and cook for an additional 1-2 minutes, ensuring they're cooked through but still moist.
  • On a serving plate, arrange the warm salmon cubes, top with your delicious onion and bell pepper mixture, and drizzle generously with the bourbon glaze. Garnish with sesame seeds for that final touch!
