How to Make Simple Turkey Chili Verde

  • Roast the poblano chiles over an open flame until charred. Once cooled, steam them in a bowl, then peel and seed.
  • Broil the tomatillos and garlic until softened, about 5-7 minutes. Blend with cilantro, lime juice, salt, and sugar until smooth.
  • Cut the turkey thighs into 1-inch chunks and season with salt and pepper. Heat olive oil in a large pot, then sear the turkey pieces for about 4-5 minutes on each side until browned. Remove and set aside.
  • In the same pot, sauté chopped onions for about 3-4 minutes until translucent. Add minced garlic and cumin, cooking for an additional 1-2 minutes until fragrant.
  • Return the browned turkey to the pot. Stir in the verde sauce and chicken stock. Add chipotle powder, oregano, bay leaves, and adjust seasoning.
  • Reduce heat to low, allowing the chili to simmer uncovered for 3-4 hours, stirring occasionally.
  • Once done, remove bay leaves. Ladle the chili into bowls and garnish with your preferred toppings.
