How to Make Fully Loaded Ground Beef Nachos

  • Begin by sautéing the diced red onion and minced garlic in olive oil over medium heat. Add the ground beef along with sea salt, paprika, chili powder, and black pepper. Cook until browned and moisture evaporates, about 8-10 minutes.
  • Clean the skillet and add butter along with a splash of olive oil. Once hot, sauté some minced garlic, then add fresh corn and a pinch of salt. Cook until the corn begins to slightly char, about 5 minutes.
  • Preheat your oven to 400°F (200°C). Line a sheet pan with parchment paper, then arrange the tortilla chips in a single layer. Sprinkle the cooked beef mixture over the chips. Top generously with cheddar cheese, jalapeños, black beans, and charred corn; feel free to repeat layers for extra goodness.
  • Slide the pan into the oven and bake for 6-8 minutes, or until the cheese is all melted and bubbling.
  • Carefully remove the nachos from the oven. Top with fresh cherry tomatoes, chopped cilantro, and a dollop of sour cream (or Greek yogurt). Serve immediately.
