Marinade

  • ¼ cup Extra Virgin Olive Oil Use avocado oil for a neutral flavor.
  • 2 tablespoons Lemon Juice Lime juice can be used instead.

  • 1 tablespoon Dijon Mustard Yellow mustard can be swapped.
  • 1 teaspoon Kosher Salt Sea salt can be used for a slight variation.

Chicken and Veggies

  • 1 pound Boneless Skinless Chicken Breasts Chicken thighs can be used for juiciness.
  • 1 medium Zucchini Yellow squash can be an alternative.
  • 1 cup Cherry Tomatoes Regular tomatoes can be used, just cube them.
  • 1 medium Red Onion Sweet onion is a milder substitute.
  • 1 can Canned Chickpeas Navy beans or lentils can be alternatives.
  • ½ cup Kalamata Olives Green olives can be used for a twist.
  • ½ cup Feta Cheese Goat cheese can be another option.
  • 2 tablespoons Fresh Dill Can substitute with parsley or mint.

Directions

  • In a mixing bowl, combine the extra virgin olive oil, lemon juice, dried oregano, Dijon mustard, and kosher salt. Mix until well blended, creating a flavorful marinade.
  • Add the boneless skinless chicken breasts, zucchini, cherry tomatoes, red onion, canned chickpeas, and Kalamata olives to the marinade. Toss everything to ensure every piece is well coated.
  • Set your air fryer to preheat at 400°F. This ensures even cooking.
  • Once preheated, transfer the marinated mixture into the air fryer basket in a single layer. Cook for about 10 minutes, shaking the basket 2-3 times.
  • After cooking, remove the basket and sprinkle the feta cheese and fresh dill on top. Serve immediately.

Notes

Optional: Serve with whole-grain pita and a fresh Greek salad for an extra burst of flavor.
