For the Sauce

  • 1/4 cup Soy Sauce Substitute with tamari for gluten-free
  • 1 tablespoon Rice Wine White vinegar can be used in a pinch
  • 1 teaspoon Fish Sauce Substitute with extra soy sauce
  • 1 tablespoon Cornstarch Arrowroot powder can be used as a substitute
  • 1 tablespoon Fresh Ginger Use ground ginger in half the amount if fresh isn't available

For the Stir-Fry

  • 2 tablespoons Olive Oil Can be replaced with vegetable or sesame oil
  • 1 medium Onion Any variety can be utilized
  • 1 pound Ground Turkey Preferably 93/7 for moisture
  • 3 cloves Garlic Fresh is preferred, garlic powder can be used
  • 1 medium Red Pepper Substitutes include bell peppers or broccoli
  • 2 stalks Scallions Can replace with chives or omit

Optional Garnishes

  • 1 tablespoon Sesame Seeds Optional, can be omitted
  • 1/4 cup Cilantro Can replace with parsley or omit

Preparation Steps

  • Dice the onion, mince the garlic, chop the red pepper, and slice the scallions, keeping white and green parts separate.
  • In a bowl, combine soy sauce, rice wine, fish sauce, cornstarch, and grated ginger. Whisk until smooth.
  • Heat olive oil in a skillet over medium heat, add onion, and sauté for about 1 minute.
  • Add ground turkey, minced garlic, and chopped red pepper, cooking for 5-7 minutes until turkey is browned.
  • Pour in the sauce mixture, stirring for 1-2 minutes until it thickens. Fold in the white parts of the scallions.
  • Serve the turkey mixture over rice or desired base, garnishing with scallion greens, sesame seeds, and cilantro.

Notes

This dish can be adapted with various vegetables and is perfect for meal prep.
