Ingredients
  

For the Filling

  • 1 lb Ground Turkey Substitute with ground chicken if desired.
  • 4 oz Chilies Fresh or canned chilies work beautifully.
  • 1 cup Sour Cream 0.5 cup for filling.
  • 1 tsp Cumin Plus 0.25 tsp for the sauce.
  • 1 tsp Ancho Chili Powder Can be swapped with regular chili powder.
  • 4 Green Onions Regular onion can be used in smaller amounts.
  • 0.25 cup Cilantro Parsley can be used as a substitute.

For the Sauce

  • 0.5 cup Sour Cream Makes the sauce creamy.
  • 1.5 cups Heavy Cream Opt for half-and-half or milk for a lighter version.
  • 0.5 cup Salsa Verde Green enchilada sauce can also work.
  • 0.25 tsp Cumin Feel free to adjust based on your flavor preference.

For Assembly

  • 2.75 cups Monterey Jack Cheese Substitute with cheddar for a sharper flavor.
  • 12 Flour Tortillas Use corn tortillas for a gluten-free option.

Instructions
 

Preparation

  • Preheat your oven to 350°F and grease a 9x13 inch baking dish.
  • In a large bowl, combine the ground turkey, chopped green onions, cilantro, chilies, cumin, ancho chili powder, salt, pepper, and 0.5 cup of sour cream. Mix well.
  • In a separate bowl, whisk together the remaining 0.5 cup of sour cream, 1.5 cups of heavy cream, salsa verde, cumin, and any additional seasonings until smooth.
  • Warm the tortillas in the microwave for about 30 seconds to make them pliable.
  • Take a warm tortilla and place approximately 1/3 cup of the turkey filling in the center. Roll it up tightly and place seam-side down in your greased baking dish.
  • Pour the prepared white sauce evenly over the rolled enchiladas. Then, sprinkle the remaining Monterey Jack cheese on top.
  • Cover with foil and bake for 20 minutes. Remove the foil and continue baking for an additional 10 minutes.
  • Allow the enchiladas to rest for about 5-10 minutes before serving.

Notes

Optional: Garnish with fresh cilantro or a dollop of sour cream before serving.
