Cooking Instructions

  • Spray the pot with cooking oil and heat it over medium-high until warm.
  • Add the smoked turkey necks to the pot, browning both sides for about 3-4 minutes.
  • Pour in the chicken broth and water, then toss in the bay leaf. Bring to a boil, then reduce heat to low and let it simmer for 20-25 minutes.
  • Dry-toast the smoked paprika, cumin, and thyme in a separate skillet for 30-45 seconds until fragrant.
  • Add the diced onion to the simmering broth and cook for 3 minutes, then stir in the minced garlic and cook for an additional 2 minutes.
  • Rinse and drain the soaked black eyed peas, then stir them into the pot with the broth and turkey. Mix in the toasted spices, salt, black pepper, and cayenne pepper.
  • Bring the pot back to a boil, then reduce heat to medium-low. Cover and let it simmer gently for 1.5 to 2 hours.
  • When the peas are soft, stir in the apple cider vinegar just 5 minutes before serving.

Notes

Check for stones in the peas before cooking, and store leftovers in an airtight container for up to 5 days.
