Ingredients
  

For the Base

  • 2 tablespoons Oil Can substitute with vegetable or canola oil.
  • 1 cup Onion (diced) Any onion variety can be used.
  • 1 pound Ground Beef 80/20 or 85/15 blend is ideal.
  • 1 packet Taco Seasoning McCormick brand recommended.
  • 1 can Pinto Beans Can substitute with black beans or kidney beans.
  • 1 can Rotel Tomatoes Any diced tomatoes with green chiles can be used.

For the Creamy Mixture

  • 1 cup Sour Cream Greek yogurt can be an alternative.
  • 1 teaspoon Garlic Powder Adjust to taste.
  • 1 teaspoon Salt Adjust to taste.

For the Topping

  • 2 cups Cheddar Cheese (shredded) Use freshly shredded cheese for better melting.
  • 3 cups Doritos (Nacho Cheese flavor) Other chip varieties can be used.

  • Heat oil in a large skillet over medium-high heat. Sauté diced onion for about 3-4 minutes until translucent.
  • Add ground beef and cook for 8-10 minutes, stirring occasionally. Drain any excess fat.
  • Stir in taco seasoning, drained pinto beans, and Rotel tomatoes. Simmer for 2-3 minutes.
  • Mix together sour cream, garlic powder, and salt in a separate bowl. Fold this into the beef mixture.
  • Preheat oven to 375°F (190°C).
  • Crush 1 cup of Doritos into bite-sized pieces; reserve the remaining chips whole.
  • Spread crushed Doritos in a baking dish, layer half of the beef mixture, and 1 cup of cheddar cheese.
  • Top with another layer of whole Doritos, remaining meat mixture, another cup of cheese, and leftover Doritos.
  • Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 7-10 minutes.
  • Let the casserole sit for 5 minutes before serving.

Notes

Optional: Top with fresh cilantro or sliced jalapeños for extra flavor.
